Mango Strawberry Smoothie

Ingredients

1 1/2 cups orange juice, chilled
1/2 12.3ounce package light silken tofu, chilled and drained
1 cup frozen unsweetened whole strawberries
1 medium mango, pitted, peeled, and chopped (about 1 cup)
Fresh mango chunks (optional)
Fresh whole strawberries (optional)
Orange sections (optional)

Directions

1. In a blender, combine the orange juice, tofu, cut up mango and strawberries. Cover and blend until smooth. If desired, for garnish, thread additional mango chunks, strawberries, and orange sections on small skewers. Add a skewer to each serving. Serve immediately.

Spiced Apple Cider

Ingredients

1 quart apple cider
1 cup orange juice
1/2 teaspoon ground ginger
1/4 teaspoon ground cinnamon
3/4 cup (6 ounces) apple brandy (such as Calvados)
Pinch ground cloves
Cinnamon sticks, for garnish

Directions

1. Combine apple cider, orange juice, ginger, cinnamon and cloves in a medium saucepan. Bring just to a simmer over medium heat and simmer 3 minutes. Divide among 6 small mugs and add brandy, if desired. Garnish each with a cinnamon stick.

3 1/2 cups vanilla ice cream
1/2 cup chocolate sorbet
1/2 cup whole milk
3 tablespoons hot fudge sauce, at room temperature

Directions

1. Soften ice cream and sorbet at room temperature for 5 minutes, if necessary.
2. Combine ice cream, sorbet, milk and hot fudge sauce in a blender and puree until smooth, scraping down sides as necessary. Serve immediately.

Per serving: 325 calories; 16 grams of fat; 6 grams of protein; 41 grams of carbohydrates; 1 grams of fiber; 192 milligrams sodium; 58 milligrams cholesterol.

Peach Smoothie

Ingredients

2 cups ice
2 peaches, pitted and cut into pieces
3/4 cup skim milk
1 container (7 ounces) plain 2% Greek yogurt
1/2 cup tangerine or orange juice
3 tablespoons honey

Directions

1. In a blender, combine ice, peaches, milk, yogurt and juice. Place lid on blender and select mix or crush setting. Blend until smooth; while machine is on, pour in honey and blend an additional 30 seconds. Pour into glasses and serve.
